Coffee, Anyone?

Written by Do I Editorial

A coffee addict?  Then you must try Kopi Luwak! It is unusually expensive coffee, selling for US $100 to US $600 per pound.

Kopi Luwak is made from the beans of coffee berries that have been eaten by the Asian Palm Civet and other civets and then passed through its digestive tract. The beans pass through the civet’s intestine; the stomach acids and enzymatic action involved in this unique fermentation process produces the beans with that unique flavour.  The beans maintain their shape after defecation and are gathered, washed, sun dried and lightly roasted (so as not to destroy the complex flavours that develop during the digestive process). They yield an aromatic coffee with much less bitterness.

Kopi Luwak is produced mainly in Indonesia and in the Philippines and is pretty popular in the US and Japan.
